Job Role Summary
The Culinary Services Supervisor assists in overseeing the daily functions of retail operations, production, and any other areas of Food and Nutrition Services as necessary. The primary responsibility of this position is to support management in ensuring that our operations are properly staffed, supervised, trained, and meeting the expectations within their assigned area of responsibility.
Essential Functions and Responsibilities
  • Responsible within assigned area for efficient operation of retail operations, production and sanitation through the supervision of employees and equipment.
  • Ensures the integrity of food by ensuring food is prepared properly for adequate quantity, consistent quality (taste and appearance, etc) and maintained at acceptable temperatures.
  • Maintains sanitation levels in all areas to the State Board of Health requirements, monitoring staff for adherence to safe food handling practices such as proper hand hygiene, time and temperature abuse, and food labeling.
  • Supervises all Eskenazi Health's Food and Nutrition Services staff including Culinary Associates, Stewards, Cashiers, Cooks, Servers, and Team Leaders; holding them accountable for ensuring exceptional customer service, and providing the most positive guest experience possible.
  • Recommends hiring, discharging, promotion and transfers within assigned area of responsibility.
  • Conducts performance evaluations within the assigned area, conducting on-going training through routine meetings and E-learnings as necessary.
  • Assists with orientation of all newly hired staff, taking responsibility for training newly hired staff within their assigned area of responsibility.
  • Assists management with properly scheduling the assigned area of responsibility, maintaining time and attendance records, and assisting with payroll as needed.
  • Utilizes efficient and proper use of Computrition, Micros and Microsoft Office applications as necessary for proper supervision of assigned area of responsibility.
  • Participates in management relief rotation and/or coverage of any Food and Nutrition Services areas as necessary.
  • Responsible for cash management within assigned area of responsibility, ensuring that all funds are accounted for and match sales in Micros, holding the cashiers accountable.
  • Assists with menu and recipe development, ensuring that menus are updated as appropriate and always reflective of accurate menu items and pricing.
Job Requirements
  • Associate's degree in hospitality, management, or related field
  • In lieu of a degree, completion of high school education or equivalent (GED) with a minimum of three years of experience in a supervisory capacity in hospitality/customer service will be considered
  • Completion of an accredited Dietary Managers Training Course is preferred
  • Must maintain Serve Safe Certification through the National Restaurant Association every five years (must obtain within 6 months of hire)
Knowledge, Skills & Abilities
  • Good interpersonal communication/leadership skills
  • Working knowledge of kitchen, cafeteria, sanitation standards, equipment and safety
  • Ability to supervise, handle management scheduling, discipline and related problems
  • Ability to use age appropriate verbal and written communication skills
  • Knowledge of branded retail and multi-unit supervision preferred.
  • Working knowledge of kitchen, restaurants, sanitation standards, equipment and safety, with the ability to train staff on basic culinary and service skills.
